Executive Summary
A partnership by soy protein supplier Solae and flavor technology developer Senomyx aims to improve soy protein's taste through the development of bitter blockers. Since April 2007, scientists from both firms have collaborated to determine the bitter components of soy protein and discovered new ingredients to modulate how taste receptors respond, the companies say Sept. 15.
