Executive Summary

"DIETARY ANTIOXIDANT" DEFINITION DEPENDENT ON IN VIVO ACTIVITY in humans is proposed in a report issued July 21 by the Food & Nutrition Board's Standing Committee on the Scientific Evaluation of Dietary Reference Intakes and the committee's Panel on Dietary Antioxidants and Related Compounds. The definition of "antioxidant" proposed in the report is based on several criteria. First, the substance must be one that is "found in human diets"; second, the "content of the substance" has to have been "measured in foods commonly consumed"; and third, in humans, the substance must decrease "the adverse effects of reactive oxygen and nitrogen species in vivo," the report states. FNB is a division of the Institute of Medicine.
